Beetroot-Cauliflower Soup


Mellow and flavorful soup with amazing color.

Made in large pan, serves 6 portions.

Total preparation time 1 hour.

Beetroot-Cauliflower Soup

1 kg beetroots

1 cauliflower

2 onions

4 garlic cloves

1 tablespoon oil

1 teaspoon salt

2 teaspoons white pepper

3 bay leafs

3 teaspoons thyme

170g blue cheese

100g cream


Peel and slice the beetroots, cauliflower, and onions.

Heat in the pan with oil for a while to get some color.

Add the spices and water to just about cover the vegetables.

Cook 15 minutes until soft.

Take out the bay leafs.

Add cheese and cream.

Blend with hand blender.
